Prepare the marinade for the chicken. Add your spices and fresh squeezed lime juice and orange juice to a glass bowl and mix well. Add in the chicken well in the marinade. Allow the chicken to marinate your chicken for at least a couple of hours, or overnight if possible. If you don’t have much time, marinate for as long as possible, making sure to coat the chicken well.
When the chicken is ready to cook, heat a large cast iron skillet on medium heat. Add 1-2 tablespoon of olive oil to the skillet, then add your chicken to the heated skillet.
Allow the first side of the chicken to get a good sear on it and cook nearly halfway through. Depending on the thickness of your chicken, this can vary in time. If using thighs, I would suggest 5-6 minutes on each side. If using a breast, you may need to cook for up to 10 minutes, then flip and cook for another 8 minutes. The chicken is thoroughly cooked when a thermometer reads 165.
Allow the chicken to rest for 5-10 minutes, then slice the chicken.
While the chicken is cooking, prepare the salsa. Finely chop the mango, red onion, red pepper and cilantro. Add all the salsa ingredients to a large bowl and mix well, allowing time to rest so the flavors come together.
Now to assemble the tacos. Add the chicken to a tortilla, slather on the mango salsa, and top with fresh avocado and cilantro. Enjoy!
