Ingredients

  • 4 strips bacon
  • ½ chopped red pepper
  • ½ chopped green pepper
  • ½ chopped onion
  • 4 oz cubed potatoes
  • 2 eggs
  • 1 avocado
  • 2 thinly sliced green onions

Instructions

  • Wash, cut and prep all your veggies.
  • First you are going to steam your potatoes. The SUPER simple way to do this is as follows: add your cubed potatoes to a small microwave safe bowl with a tablespoon or 2 of water. Place in the microwave for a minute or 2, just until the potatoes start to soften a bit. Since the potatoes take the longest to cook, this kickstarts the cooking process so that they finish cooking beautifully and crisp up once you add them to the skillet.
  • Get your skillet nice and hot over medium high heat. Add the bacon and cook until a good amount of grease has been released and is turning a darker pink color. Don’t drain the bacon grease! It keeps all the flavor in and becomes the cooking oil for the potatoes. Trust me.
  • Next, add in the potatoes. Let them rest where they lie so that they start to get a good golden crisp to them. Then stir around so that the other sides of the potatoes get crisp.
  • Next, throw in onions and peppers and let them get nice and caramelized. If at any point your bacon is starting to get too crisp, you can remove it so that the other ingredients reach perfection, then toss it back in to warm up.
  • Top with eggs, avocado (a must to cut through all the rich, savory) and green onions. Enjoy!
