Easy Crispy Potatoes
These easy crispy potatoes are a delicious and easy side dish to add to your weekday meal rotation. Boiled until tender, then gently smashed and roasted, they get beautifully crispy edges. Each bite is a little crunchy, a little buttery, and totally satisfying.

- 1 lb golden baby potatoes
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ tsp ground pepper
Preheat the oven to 400. First, add the potatoes to a large pot of water and boil until fork tender. You don't want them to be overly soft.
Now, add the softened potatoes to a large sheet pan. Using the bottom of a glass or measuring cup, smash the potatoes gently. You want them to maintain their shape slightly, so don't over smash them into mashed potatoes.
Drizzle olive oil over them, and season generously with salt and pepper.
Bake for 20 minutes, then flip, oil and salt/pepper them again and place back in the oven to cook for an additional 15-20 minutes until crispy and golden all over.
