Gluten Free Apple Cider Donuts
These gluten free apple cider donuts are fluffy, easy to make, and bring you that subtle apple cider flavor. Every baker needs an easy, apple cider donut recipe in their toolkit. It's just a great way to celebrate the season without much fuss. These gluten free donuts boast a fluffy, tender crumb, subtle apple cider flavor, and are coated in a spiced sugar.

For the donuts
- 50 grams dairy free butter
- 10 grams coconut oil
- 55 grams apple cider
- 1 egg
- 55 grams tapioca flour
- 70 grams almond flour
- 35 grams sugar
- ½ teaspoon xanthan gum
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
For the apple pie spiced sugar
- 70 grams sugar
- 1 teaspoon cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
Preheat the oven to 325. The first step is to reduce your apple cider. This will concentrate the flavor of the cider so that your donuts are more flavorful. To do this, simply place 1-1.5 cups of the apple cider in a saucepan and heat over medium heat until the cider has reduced to about ¾-1/2 a cup. I also place a cinnamon stick and a knob of fresh ginger in the cider as it is reducing to impart even more flavor. Set aside to cool.
Next, add all the dry ingredients to a bowl and mix well.
In a separate bowl, add all the wet ingredients (including the egg) to a bowl and whisk.
Add the wet ingredients into the dry ingredient and gently mixed until well incorporated and no pockets of dry ingredients remain.
Grease a donut pan well. Pour the batter into the donut molds, filling each one about ¾ full.
Bake for 15-16 minutes until golden and baked through.
While the donuts are baking, mix together the apple pie spice sugar. Add 1 cup of sugar to a bowl and the spices and mix well.
Allow the donuts to cool, then brush on bit of apple cider to each donut on top and bottom. Ensure you just lightly brush on the cider, just enough to allow the sugar coating to stick.
Then, swirl your donut in the apple pie spice sugar on both sides. Enjoy!
