Pre heat the oven to 340.
First, you’re going to make the crust/topping for the bars. This base doubles as the crust, as well as the topping. Mix together the dry ingredients.
Now add the butter and cut it in with a fork or pastry blender until you have a crumbly mixture.
Last, add the egg and mix well. The dough should be a little shaggy, but will hold together if pressed together.
Press ½ the dough into an 8X8 pan and bake for about 12-14 minutes. It should have a little browning. Set aside to cool slightly.
While the crust is cooling, peel and cube your apples.
Get a skillet nice and hot, then add butter and apples and butter and cook until the apples are starting to soften.
Once the apples are tender, add in the apple pie seasonings and sugar, and continue to cook until the sugar is starting to caramelize slightly.
Now sprinkle on the tapioca flour and continue to mix until the filling mixture has thickened. Remove from the heat.
Gently pour the apple filling on top of the cooled crust. Then, sprinkle and crumble the remaining dough mixture on top.
Bake for about 20 minutes until the crust is nice and golden brown. These are great on their own, or top with icre cream or caramel if you wish! Enjoy!
