These gluten-free hot chocolate cookies boast the flavors you love of hot chocolate, lovingly turned into an addictive cookie that is packed with chocolate (cocoa powder AND chocolate chunks) and ooey gooey vegan marshmallows.
The Story:
I’m so excited to share these gluten free hot chocolate cookies with you! They boast a soft and fudgy interior, while the edges get a bit of crisp to them. A bonus textural surprise…some of the marshmallows that melt out during the baking process start to caramelize so you get these awesome little chewy caramel bites. Delicious cookies that are grain free and dairy free, but are full of flavor and seasonal nostalgic goodness. These will absolutely be on repeat in our household every winter!

Here is the list of ingredients you will need to make these gluten free hot chocolate cookies.
- Almond Flour: This grain free flour gives these cookies their structure and helps them maintain a nice chewy texture.
- Tapioca Flour: This grain free flour helps absorb the liquid ingredients and helps create the soft, fluffy texture.
- Cocoa Powder: A star ingredient! Cocoa powder gives these cookies their key chocolate flavor.
- Dairy-Free Butter: I used Earth Balance dairy free butter and it worked nicely for flavor and structure.
- Egg: Gives the cookies structure, rise and richness.
- Sugar: I use both regular granulated sugar and brown sugar for flavor depth and superior texture.
- Brown Sugar: Brown sugar has more moisture content and more rich flavor than granulated sugar. The combo is perfect for delicious cookies.
- Salt: Every baked good needs salt to enhance the flavors!
- Baking Powder: For rise and fluff.
- Baking Soda: The combination of baking powder and soda yields a nice rise for the cookies.
- Xanthan Gum: This helps the cookies maintain their structure so they are not too crumbly.
- Vanilla: Dark vanilla extract adds richness and flavor.
- Semi-sweet Chocolate: I love using a chopped baking bar. Having varying sizes of chocolate bits adds a rustic charm and surprise in every bite.
- Mini Marshmallows: I LOVE the Dandies brand of marshmallows. They do not use corn products in their marshmallows and they are delicious!
Step By Step Preparation Instructions:
- Step 1: First, you are going to cream together the butter and sugars. Add the butter and both sugars in a mixer and beat together until creamy and slightly fluffy. Don’t be afraid of over mixing at this point. The butter and sugar needs time to be brought together.
- Step 2: Then, add the egg and vanilla and vigorously mix again until well incorporated and fluffy.
- Step 3: Next, add all dry ingredients, including the cocoa powder and mix until well incorporated. Because there is no gluten, over mixing at this point is not much of an issue, but I still err on the side of caution and slowly mix the dry ingredients until just incorporated.
- Step 4: Lastly, add in the super deliciousness of the chopped chocolate or chocolate chips and marshmallows and hand mix until evenly dispersed.
- Step 5: Line a cookie sheet with parchment paper. Using a medium sized cookie scoop, scoop out the cookies onto the baking sheet (about 6 at a time), leaving space in between each cookie. For that bakery style look, sprinkle a bit more of the chopped chocolate or a couple of chocolate chips on top of each cookie, then place in the oven for 11min. Allow to cool slightly before enjoying. Those marshmallows get very hot while cooking so be cautious of that before devouring!

Gluten-Free Hot Chocolate Cookies
Ingredients
- 120 grams almond flour
- 75 grams tapioca flour
- 35 grams cocoa powder
- 130 grams dairy free butter
- 100 grams sugar
- 100 grams brown sugar
- 1 egg
- 1 teaspoon vanilla
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ teaspoon xanthan gum
- 2 oz dairy free chocolate or chocolate chips
- 40 grams vegan mini marshmallows I use the Dandie brand
Instructions
- Preheat the oven to 325.
- Using a mixer, add the butter and both sugars and beat together until creamy and slightly fluffy. Don’t be afraid of over-mixing at this point!
- Add in the egg and vanilla and mix well again until smooth and fluffy.
- Add all the dry ingredients, including the cocoa powder and mix slowly until well incorporated.
- Lastly, add in the chopped chocolate or chocolate chips and marshmallows and hand mix until incorporated and evenly dispersed.
- Line a cookie sheet with parchment paper. Using a medium sized cookie scoop, scoop out the cookies onto the baking sheet, about 6 at a time, leaving space in between each cookie.

The Finished Product:
Look at the marshmallow pull! Look at the chocolate chunks! Rich, chocolate, soft cookies with hidden marshmallows throughout. The perfect indulgence after being in the cold or playing in the snow. Serve along side my healthy hot chocolate and you have yourself the most festive treat!
