This fall hash is nourishing breakfast staple to add to your rotation! It's an easy grain free breakfast idea that is nutrition packed, comes together in one skillet, and only 5 ingredients are needed for this recipe! It's a great way to add protein and nutrients to your morning, and it goes along great with an over-easy egg. This is also a convenient and long lasting meal prep idea to get you ready for the week.

Here is the list of ingredients you will need to make this sweet potato apple hash.

  • Sweet Potatoes: Loaded with vitamins, minerals, and such a satisfying carbohydrate to fuel you up for the day.
  • Apples: You can use any variation you prefer here, but a red apple with a mild flavor will provide the best flavor balance.
  • Breakfast Sausage: Your main protein source! Pork sausage has great flavor and really plays on those comforting fall savory herbs.
  • Onion: Fresh chopped onion will provide a nice backdrop flavor and just a touch of savory sweetness after being caramelized.
  • Fresh Thyme: I prefer to use fresh thyme for this, but feel free to use dried if that is what you have on hand.
  • Dairy Free Butter: This will be your cooking oil source for sautéing your vegetables. I like using diary free butter here instead of oil as it gives this hash a nice comforting flavor.
Ingredients for Sweet Potato Apple Hash

Step By Step Preparation Instructions:

  • Step 1: You will first prep and chop the sweet potatoes, onion and apples. The onion you will finely chop, and the sweet potatoes and apples will be cubed.
  • Step 2: Get a large skillet hot. Add 2 tablespoon of dairy free butter. Add in the chopped sweet potato and onion. Cook over medium heat until the onions are translucent and fragrant, and the sweet potatoes have become fork tender and have a golden sear to them.
  • Step 3: Add in the apples and cook until tender, but not overly soft.
  • Step 4: Next, add in the sausage and cook until no longer pink and is cooked thoroughly.
  • Step 5: Lastly, add in the fresh thyme and salt and cook until the thyme is fragrant. Top with an egg if you would like! Enjoy!
