I love a good “throw together” quick dinner! This chicken sausage and veggie skillet meal is loaded with veggies, comes together in less than 30 minutes, and has amazing flavor thanks to the flavorful chicken sausage and caramelized veggies.
The Story:
In addition to the sausage and veggies, add in some comforting rice, top with some avocado and bright herbs, and you have a fully nourishing dinner. This is a great meal prep dinner idea too! You can prep everything ahead of time as it heats up wonderfully. We have started spring sports in our household and this is one meal that plays on repeat during the busy spring season!

The Ingredients:
Here are the ingredients that you will need to make this sausage and veggie skillet.
- Banza Rice: This was my first time trying rice from Banza, and it was so good! A new fam favorite.
- Chicken Sausage: I love Gilbert’s craft sausages, in particular for this recipe the sweet pepper and onion flavor which works deliciously with the onions and bell peppers used in this skillet meal.
- Onion: Caramelized onion is one of my favorite flavors.
- Bell Peppers: I love the flavor of caramelized peppers too and they work so well with the onion, and keep a slight crunch to them for great texture balance.
- Zucchini: Get those green veggies in! I like adding zucchini in for extra nutrition and veggies.
- Avocado: Creamy, fresh avocado helps add some lightness to this super savory meal, plus the dose of good fat is always welcome!
- Cilantro: Topping this with a fresh herb helps round out the flavor profile and adds brightness.
- Olive Oil: For caramelizing the veggies in, as well as adding some to the rice.
How to Make A Sausage and Veggie Skillet:
This skillet meal comes together very easily, and most of the work required is chopping ingredients!
- Step 1: First, prepare your rice according to your package instructions or cook up some cauliflower rice, whichever you prefer! Set the rice aside.
- Step 2: Chop your veggies that you would like to use and slice up the chicken sausage. Onion, bell pepper and zucchini are my go to for this, but you can use whatever you prefer or have on hand!
- Step 3: In a skillet, heat a tablespoon of olive oil, then add in the onion and bell pepper and cook for 8-10 minutes.
- Step 4: Once those veggies start to have a sear on them and have began to soften, then add in the zucchini. Cook for about 3-4 minutes until the zucchini begins to have a sear on it.
- Step 5: Then, add in the chicken sausage and cook until heated and cooked through and has browned slightly.
- Step 6: Chop or slice your preferred toppings. I love avocado and cilantro to brighten up the dish and the avocado adds a good healthy fat.
- Step 7: Spoon the rice into a bowl, along with the sausage and veggies mix, then top as you desire. Enjoy!
