Now introducing my new favorite dessert! This decadent grain-free chocolate chip skillet cookie is soft and chewy in the middle, slightly crispy around the edges, and absolutely delicious!
The Story:
I always say that everyone deserves to enjoy a comforting and delicious chocolate chip cookie, but now we have super-sized it, made the baking process even easier, and elevated the game with this gluten free chocolate chip skillet cookie. You HAVE to try this one! I’d argue that nothing feels more special, indulgent or comforting than this right here. Add ice cream scoops directly to the middle to take the indulgence up a notch, or slice and serve. Enjoy friends!

🧾The Ingredients For Gluten-Free Skillet Cookie:
- Almond Flour: This grain-free flour makes up the base of the cookie dough and helps with maintaining a delicious moisture and chewiness to the cookies.
- Tapioca Flour: This grain-free flour helps balance out the moisture content from the almond flour to create the perfect, fluffy texture while absorbing the liquid ingredients.
- Egg: One egg gets added to the batter for the perfect amount of liquid and structure.
- Dairy-free Butter: I use Earth Balance butter as it maintains its structure well and has nice flavor.
- Sugar: Of course a cookie needs a good dose of sugar.
- Brown Sugar: Brown sugar gets added for depth and rich flavor to create the best combo.
- Baking Chocolate Bar: Using a baking bar and chopping it up is more cost efficient, most baking bars do not have milk added to it, and it adds a rustic charm that I love. My favorite to use is Baker’s semi-sweet premium baking bar.
- Baking Powder: The rising agent for these cookies to give them a nice rise and fluff. To keep these grain-free, use Otto’s Naturals grain-free baking powder. It works perfectly!
- Xanthan Gum: This is a replacement aid for gluten, to help your grain-free and gluten-free bakes maintain their moisture and structure.
- Salt: A necessity in baking to enhance and round out the flavors.
- Vanilla: A good dose of quality vanilla extract is needed for flavor and depth.
How to Make A Gluten-Free Skillet Cookie:
- Step 1: Preheat your oven to 350. First, add the butter and both sugars to a bowl (or to a mixer if you would like, but keep it on low speed during the whole process) and begin to cream together the butter into the sugar until creamy.
- Step 2: Then add in the egg and vanilla extract and mix well, again until creamy and smooth.
- Step 3: Next, add in the flour, remaining dry ingredients, and mix until the dough comes together.
- Step 4: Lastly, add in those delicious chocolate chunks and stir until well disbursed. Reserve about 2 oz of the chocolate to add to the top of the skillet.
- Step 5: Generously grease your favorite cast iron skillet with dairy-free butter, then add your batter to the skillet. Use a spatuala to spread the dough evenly into the skillet. Top the skillet with more chocolate chunks, then place in the oven to bake for 35 minutes. Top with flaky sea salt and allow to cool until warm. This cookie skillet is most decadent when served warm so that the ice cream melts into the cookie, creating the most special dessert experience.
- Storage Tip: If you plan on having leftovers, I do not recommend adding the ice cream directly to the center of the cookie as it will not keep well. This cookie skillet keeps deliciously though if sliced and kept in an airtight container in the refrigerator.
