The Ingredients:
Here is the list of ingredients you will need to make these chicken tacos with mango salsa:
- Chicken breasts or thighs: Feel free to use your favorite cut of chicken for this recipe. Chicken breasts or thighs will work fine for this recipe.
- Mango: Fresh mango yields the best flavor and texture for this salsa. In a pinch, you can use frozen mango though.
- Red Pepper: Red pepper gives such a nice flavor balance for the mango salsa.
- Red Onion: This will be added to the salsa for depth of flavor. The vinegar and lime juice will soften the bite so the flavor is mild.
- Limes and Oranges: Fresh lime and orange juice will marinade the chicken for great flavor.
- Chili Powder, Cumin, Salt, Pepper: These spices will get added to the lime and orange juice for the perfect savory seasoning.
- Vinegar, Lime Juice, Salt, Cilantro: These spices/additions will be needed to round out the salsa.

Step By Step Preparation Instructions:
- Step 1: Marinate your chicken for at least a couple of hours, or overnight. If you don’t have the time, just marinate it for as long as possible, making sure to coat the chicken well. Heat a large cast iron skillet on medium heat. Add your chicken to the heated skillet, allowing the first side to get a good sear on it and it has cooked nearly halfway. Depending on the thickness of your chicken, this can vary in time. If using thighs, I would suggest 5-6 minutes on each side. If using a breast, you may need to cook the first side for up to 10 minutes, then flip and cook for another 8 minutes. The chicken is thoroughly cooked when a thermometer reads 165.
- Step 2: While the chicken is cooking, prepare the salsa. Finely chop the mango, red onion, red pepper and cilantro. Add all the ingredients to a large bowl and mix well.
- Step 3: Now to assemble the tacos. Add the chicken to a tortilla, slather on the mango salsa, and top with fresh avocado and cilantro. Enjoy!
