These flavorful berry crumble bars feature a layer of bright, jammy berry filling, topped with a buttery crumb topping.
The Story:
Blackberries are so nostalgic to me and take me back to eating all the blackberry cobblers my momma makes in the summer! These bars boasts all the same flavors of berry cobbler and are so easy to make. Summer is nearing the end, so put those delicious seasonal berries to good use and make these bars before it’s too late!

Here is the list of ingredients you will need to make these berry crumble bars:
- Almond Flour: This grain-free flour makes up the crust for these bars.
- Tapioca Flour: This grain-free flour is added to the crust to help with absorbing liquid ingredients and
- Dairy Free Butter: I use Earth Balance butter for these bars and it worked perfectly to give these bars the best flavor and texture.
- Brown Sugar: Using brown sugar for this recipe yields the best flavor and texture, rich and delicious!
- Xanthan Gum: This gluten-free baking agent helps your baked goods retain their moisture so they do not become too crumbly.
- Baking Powder: This will be the rising agent for this recipe so your bars get a little lift to them.
- Salt: Every baked good needs a bit of salt to enhance flavors.
- Mixed Berries: You can use any variation of berry you would like here! I used mostly blackberries, but my mix also included blueberries and raspberries. You can use fresh or frozen.
- Lemon Juice: A dose of lemon juice helps achieve a bright flavor for the berry filling and offsets the rich flavor of the crust.
- Sugar: Granulated sugar will be added in with the berries to create a deliciously sweet filling.
Step By Step Preparation Instructions:
- Step 1: Preheat the oven to 350. Start with the crust/dough first. Add all dry ingredients to a bowl and mix well. Add in the butter and using a fork or pastry blender, cut the butter into the mixture until the butter has broken down and the dough has become somewhat cohesive, but still has a crumbly texture. Grease well, or line an 8X8 baking pan with parchment paper. Press ½ of the dough mixture into the bottom on the pan, pressing down lightly to create a sturdy crust. Place in the oven and bake for about 15-16 minutes until is has just lightly turned golden. Remove and let chill, slightly pressing the crust down to create a sturdy base.
- Step 2: While the crust is baking, add all the berry filling ingredients to a saucepan and mix well. Place the saucepan on the stove over medium-low heat until the berries have broken down and the mixture has become jam-like. It should thicken up as you cook it. This should take around 8-10 minutes. I used frozen berries for this, but if you are using fresh berries, you may not need to cook quite as long as frozen berries will contain more moisture. Set aside the berry mixture to cool while the base of your bars finish pre-cooking.
- Step 3: Once the base crust is pre-cooked and has cooled slightly, and once the berry mixture has cooled slightly, it is now time to finish assembling the bars. Gently pour the berry filling on top of the crust. Using a spatula, smooth the filling over the entire crust evenly. Using the remaining crust dough, loosely crumble the topping on evenly over the top of the berry filling. Place in the oven for about 16 minutes, until the crumble topping is golden brown. Allow the bars to cool completely, then cut them into bars and enjoy! These are also fantastic served alongside some ice cream!
