Crispy Potato Salad

This crispy potato salad puts a fresh twist on the classic ranch version, loaded with vibrant flavor and crave-worthy texture. This delicious potato salad made with (crispy smashed potatoes) delivers the perfect balance of golden edges, creamy sauce and savory flavors!

Ingredients
  

  • 1 lb baby gold potatoes
  • 1 lb bacon
  • ¼ cup thinly sliced green onion
  • 2 cups mayonnaise
  • 2 tablespoon ranch seasoning I use Selefina's "Dill-icious" Ranch Seasoning
  • ½ teaspoon salt for seasoning the potatoes
  • ¼ tsp pepper for seasoning the potatoes

Instructions
 

  • First, you will need to prepare the potatoes. Preheat the oven to 400. Boil the potatoes in salted water until fork tender.
  • Place the potatoes onto a large sheet pan. Then, using the bottom of a glass or a measuring cup, smash down the potatoes.
  • Drizzle olive oil over the potatoes and season with salt and pepper. Cook in the oven for 20 minutes, then flip the potatoes, season with oil, salt/pepper again, and cook for another 15-20 minutes until golden and crispy. Set aside to cool.
  • Next, cook up your bacon as you prefer. You will want the bacon to be crispy for superior texture. Coarsely chop up the bacon into small pieces. Set aside.
  • Now, add the ranch seasoning blend and mayonnaise to a bowl and mix together.
  • Add all components and remaining ingredients to a bowl and mix well. Serve warm or chilled!
