Easy Mango Salsa
Warmer weather on the horizon means fresh, vibrant food! This salsa is super easy to make, and only requires 5 ingredients, but it makes a big flavor impact! Bright, sweet, and zesty, it's the perfect way to add a pop of flavor to any dish.

- ¼ cup minced red onion
- 2 mangos, finely cubed
- 1 red pepper, finely diced
- 1-2 tablespoon fresh lime juice
- ¼ cup chopped fresh cilantro
- ½ teaspoon salt
Mince the red onion and place it in a bowl. Squeeze fresh lime juice over the top and let it sit for a few minutes to lightly pickle. This helps mellow the sharpness and soften the bite of the onion.
Finely chop the mango and red pepper, and thinly slice/chop the fresh cilantro.
Add everything to the bowl, squeeze more lime juice over the top, and mix well until combined. Taste and adjust with salt as needed!
This salsa keeps well in the fridge and tastes best chilled, so feel free to make it ahead and enjoy it when you’re ready.
