Ingredients
  

  • 2 lbs chicken thighs
  • 2 tablespoon olive oil
  • 2 tablespoon Italian Seasoning
  • 2 lemons
  • 1 head garlic
  • ½ teaspoon salt
  • ¼ teaspoon ground pepper

Instructions
 

  • Preheat your oven to 400°F. Pat the chicken thighs dry with a paper towel. This helps the skin get beautifully crisp. Season generously with salt and pepper.
  • In a small bowl, mix the olive oil and Italian seasoning to create a simple rub. Coat the chicken evenly and generously, then place the pieces in a cast iron skillet.
  • Zest 2 lemons, and juice 1 of them, then pour the juice and zest evenly over the chicken.
  • Slice the top off a head of garlic and nestle it into the skillet along with a few lemon slices, tucking them around the chicken.
  • Roast for 20 minutes, then carefully remove the skillet from the oven. Spoon the pan juices over the chicken to baste it, then return it to the oven for about 5 more minutes, or until the internal temperature reaches 165°F.
  • Remove from the oven and let the chicken rest for a few minutes before serving.
