Lemon Herb Chicken

- 2 lbs chicken thighs
- 2 tablespoon olive oil
- 2 tablespoon Italian Seasoning
- 2 lemons
- 1 head garlic
- ½ teaspoon salt
- ¼ teaspoon ground pepper
Preheat your oven to 400°F. Pat the chicken thighs dry with a paper towel. This helps the skin get beautifully crisp. Season generously with salt and pepper.
In a small bowl, mix the olive oil and Italian seasoning to create a simple rub. Coat the chicken evenly and generously, then place the pieces in a cast iron skillet.
Zest 2 lemons, and juice 1 of them, then pour the juice and zest evenly over the chicken.
Slice the top off a head of garlic and nestle it into the skillet along with a few lemon slices, tucking them around the chicken.
Roast for 20 minutes, then carefully remove the skillet from the oven. Spoon the pan juices over the chicken to baste it, then return it to the oven for about 5 more minutes, or until the internal temperature reaches 165°F.
Remove from the oven and let the chicken rest for a few minutes before serving.
