  • Step 2: In a small bowl, mix the olive oil and Italian seasoning to create a simple rub. Coat the chicken evenly and generously, then place the pieces in a cast iron skillet.
  • Step 3: Zest the 2 lemons, and juice one of them, then pour the juice and zest evenly over the chicken.
  • Step 4: Slice the top off a head of garlic and nestle it into the skillet along with a few lemon slices, tucking them around the chicken.
  • Step 5: Roast for 20 minutes, then carefully remove the skillet from the oven. Spoon the pan juices over the chicken to baste it, then return it to the oven for about 5-10 more minutes, or until the internal temperature reaches 165°F. If you have a thick cut of thighs, it may take slightly longer.
  • Step 6: Remove from the oven and let the chicken rest for a few minutes before serving.
