Sweet Potato Apple Hash
This sweet potato apple hash is brimming with the savory fall flavors of sausage, sweet potato, thyme, and a touch of sweetness thanks to the apples. - 1 lb seasoned pork breakfast sausage
- 2 apples
- 2 sweet potatoes
- ½ white onion
- 1 tablespoon fresh chopped thyme
- ½ teaspoon salt
You will first prep and chop the sweet potatoes, onion and apples. Finely chop the onion, and cube the sweet potatoes and apples.
Get a large skillet hot. Add 2 tablespoon of dairy free butter. Add in the chopped sweet potato and onion. Cook over medium heat until the onions are translucent and fragrant, and the sweet potatoes have become fork tender and have a golden sear to them.
Add in the apples and cook until tender, but not overly soft.
Next, add in the sausage and cook until no longer pink and is cooked thoroughly.
Lastly, add in the fresh thyme and salt and cook until the thyme is fragrant. Top with an egg if you would like! Enjoy!
