I’ve been making these pumpkin pie martini’s for years and every year without fail, they always make an appearance in the fall! By now, the sun escapes well before dinner time, so serving up a seasonal cocktail can be a fun way to to create a welcoming happy hour in your own home. Snuggle in with a warm blanket, turn on some great tunes, and settle in with one of these pumpkin pie martinis with the company you love. A sure way to end any day with a true feeling of contentment!

Here is the list of ingredients you will need to make these pumpkin pie martinis.
- Coconut Milk: I suggest using a good quality light coconut milk from a can for this. Full fat coconut milk is too thick for a cocktail, and coconut milk from a carton is too watery. A good quality light coconut milk from a can is the perfect consistency for these martinis.
- Pumpkin Pie or Caramel Vodka: Either type of vodka will work in these. You may be able to use plain vodka if that is what you have on hand, but you’ll want boost up the other flavor elements to offset it.
- Pure Pumpkin: Pure pumpkin is used to create that fall pumpkin flavor you’re looking for.
- Pumpkin Pie Spice: Every pumpkin treat needs some pumpkin pie spice for that great seasonal flavor.
- Pumpkin Spice Sugar: For the rim of the glass.
Step By Step Preparation Instructions:
- Step 1: An optional first step (but a really good one): Mix a teaspoon or 2 of pumpkin pie spice, with a teaspoon or 2 of sugar and mix well, pour onto a plate or bowl. Dampen the rim of your martini glass with a bit of water, then twist the top into the mixture of pumpkin pie spice sugar to coat the rim.
- Step 2: Fill a cocktail shaker with ice. Place all ingredients into the cocktail shaker, and shake vigorously so that the flavors blend well.
- Step 3: Strain into 2 martini glasses. I suggest using a mesh strainer, as the spices and pumpkin puree can leave residue behind and it’s best to have it strained out.

- 2 tablespoon pure pumpkin
- 1 cup coconut milk
- ½ teaspoon pumpkin pie spice
