This watermelon cucumber salsa is so refreshingly satisfying and such a great way to take advantage of everyones favorite quintessential summer fruit…watermelon! Packed with fruit, veggies, good fat and so much flavor. It’s so good on shrimp tacos, or alongside seared salmon, but I mostly eat mine by the bowlful with grain-free chips. When the Summer heat is getting to you and you just can’t be bothered to turn on the oven, whip this up. Summer deliciousness in a bowl. Quick, easy, nourishing, and suitable for just about anyone with a dietary restriction!

The Ingredients:
Here is the list of ingredients you will need to make this watermelon cucumber salsa:
- Watermelon: The best summer fruit. The crunchy, refreshing, sweetness of the watermelon steals the show.
- Cucumber: The cucumber also adds a crunchy, refreshing satisfaction. I like using an english cucumber for this recipe. I find they have a better texture and flavor.
- White Onion: I use white onion for this salsa. I think it has just a bit more mild flavor and is a tad more savory to balance out the sweetness. You can absolutely use red onion if you prefer!
- Avocado: Avocado adds a nice creaminess, while also helping to keep you satiated and feeling satisfied.
- Cilantro: For bright, punchy flavor. Every salsa needs some cilantro!
- Lime juice: You will want to use fresh lime juice for this. It adds flavor, brightness and helps cut down on the bite from the onion.
- Jalapeno: Feel free to add some spice and add in diced jalapeno. I usually leave it out because my kids love it without.
- Salt: for flavor balance.
Step By Step Preparation Instructions:
It is super simple to make this watermelon salsa with cucumbers and avocados.
- Step 1: The only real work required is cutting and dicing your ingredients. First, mince the onion, then add them to a large bowl. Slice the limes and squeeze directly on top of the onions. This will help slightly “pickle” the onion, taking out some of its bite, leaving you with the mild flavor of onion.
- Step 2: Then, prep the remaining ingredients. Dice the watermelon, cucumber, and avocado into small cubes and chop the cilantro.
- Step 3: Add all ingredients to a bowl and mix well. Feel free to eat immediately or prepare ahead of time and let it rest in the refrigerator to allow the flavors to really come together. This salsa gets better with time! And don’t worry about the avocados turning, the lime juice prevents them from turning.
