This blackberry salmon salad is a bright, vibrant salad with fresh blackberries, tender salmon, creamy dairy-free feta, mint, and is completed with a zingy blackberry vinaigrette dressing.

Here is the list of ingredients you will need to make this blackberry salmon salad:
- Salmon: Use your preferred salmon for this. I use the frozen salmon from Costco and I find it to have a mild flavor and a tender flake.
- Spinach: Feel free to use whatever greens you have on hand! I always have fresh spinach on hand, but kale or mixed greens would work well here.
- Blackberries: Fresh blackberries will be used in the salad, as well as muddled down to create the vinaigrette.
- Dairy-Free Feta Cheese: I LOVE Violife dairy-free feta cheese. It is so, so good. It has a nice mild flavor and a super creamy texture. Seriously, I cannot recommend this brand enough.
- Avocados: You’ll know I love my avocados. They are a simple addition to every salad for healthy fat and to keep you satiated.
- Mint or Basil: I would probably prefer basil in this, but my local market only had mint so I went with it! Either would work!
- Olive Oil/Maple Syrup/Salt/Lemon Juice/Red Wine Vinegar/Chopped Mint or Basil: These are the ingredients that will be required for the fresh blackberry vinaigrette.
- Salt/Pepper/Coconut Sugar: These will be the simple seasonings needed for the salmon.
Step By Step Preparation Instructions:
- Step 1: You will first prepare the salmon. Simply season the salmon filet evenly with salt, pepper and coconut sugar. Place in the air fryer and bake at 325 for 8 minutes, then bake at 390 for 3 minutes.
- Step 2: While the salmon cooks, add all vinaigrette ingredients to a small bowl and whisk well until the ingredients have emulsified together.
- Step 3: Once the salmon is finished cooking, add the spinach to a platter. Add on the blackberries, feta cheese, chopped mint or basil, and sliced avocados. Top with the salmon. Once you have served the salad into individual portions, add on the vinaigrette to each serving. That’s it!

Ingredients
For the Salad
- 2 salmon fillets
- ¼ teaspoon salt
- ⅛ tsp pepper
- 1 tablespoon coconut sugar
- 2 cups fresh spinach
- 2 cups fresh blackberries
- 1 cup dairy-free feta cheese
- 1 sliced avocado
- 2 tbsps chopped fresh mint or basil
For the blackberry vinaigrette
- ⅓ cup olive oil
- 1 cup fresh blackberries to yield about ½ cup juice
- ¼ teaspoon salt
- 1 tablespoon maple syrup
- 2 tbsps red wine vinegar
- 1 tablespoon lemon juice
- 2 tbsps chopped mint or basil
Instructions

- Place in the air fryer and bake at 325 for 8 minutes, then increase the heat and bake at 390 for 3-4 minutes based on your preference.
