🧾 The Ingredients:
Here is the list of ingredients you will need to make these gluten free apple cider donuts.
- Almond Flour: This grain free flour helps create a fluffy, tender crumb for these donuts.
- Tapioca Flour: This grain free flour works perfectly in combination with the almond flour to create the perfect texture for this recipe.
- Eggs: Eggs help the donuts rise, and creates the correct texture for this recipe.
- Dairy Free Butter: Melted butter will be added to the donut batter.
- Coconut Oil: Using a combination of butter with oil creates a moist donut as well as rich flavor.
- Sugar: A bit of sugar gets added to the batter, and is also needed for coating the donut.
- Apple Cider: The star ingredient! I prefer getting cider from a local cider mill as they tend to have more flavor. You want a high quality cider to ensure a flavorful donut. You will heat the cider over medium heat to reduce the cider to help impart more flavor.
- Cinnamon, nutmeg, ginger: These warming spices all get added to the donut batter, and they are needed as well to create the flavored sugar for the exterior.
Step By Step Preparation Instructions:
- Step 1: Preheat the oven to 325. The first step is to reduce your apple cider. This will concentrate the flavor of the cider so that your donuts are more flavorful. To do this, simply place 1-1.5 cups of the apple cider in a saucepan and heat over medium heat until the cider has reduced to about ¾-1/2 a cup. I also place a cinnamon stick and a knob of fresh ginger in the cider as it is reducing to impart even more flavor. Set aside to cool.
- Step 2: Next, add all the dry ingredients to a bowl and mix well.
- Step 3: In a separate bowl, add all the wet ingredients to a bowl and whisk.
- Step 4: Add the wet ingredients into the dry ingredient and gently mixed until well incorporated and no pockets of dry ingredients remain.
- Step 5: Grease a donut pan well. Pour the batter into the donut molds, filling each one about ¾ full.
- Step 6: Bake for 15-16 minutes. While the donuts are baking, mix together the apple pie spice sugar. Add 1 cup of sugar to a bowl and the spices and mix well.
- Step 7: Allow the donuts to cool, then brush on bit of apple cider to each donut on top and bottom. Ensure you just lightly brush on the cider, just enough to allow the sugar coating to stick. Then, swirl your donut in the apple pie spice sugar on both sides. Enjoy!
