This berry beet smoothie bowl is the perfect, simplistic way to hyper nourish your body.
The Story:
Beets have so many great nutritional benefits and are high in betalains, folate, potassium, magnesium and vitamin C. All great vitamins/minerals for reducing inflammation and strengthening your immune system. They have an earthy flavor that is complimented with the combination of sweet berries in this recipe. I love my sweets and they are my favorite thing to share, but I want to help teach you how to eat well and fuel your body too. I try to eat as much nutrient dense, whole foods as much as possible and I’m looking forward to sharing some of my favorite go-to meals, lunches and breakfasts with you this year! Here is the list of ingredients you will need to make this vegan, berry beet smoothie bowl.
- Frozen berries: I get all my frozen fruit at Costco. For this recipe, I use their organic blend of raspberries, blueberries and blackberries.
- Frozen Strawberries: Adding strawberries is a must. They bring in a nice sweet flavor to balance the earthiness of the beets.
- Beets: The star ingredient! I buy cooked, ready-to-eat beets, then cut them up and place in the freezer to throw into smoothie bowls and smoothies anytime. My go to brands for beets are Gefen (can be found at Costco) and Love Beets (can be found at Target and most grocery stores.) Make sure your beets are not marinated in anyway. You’re looking for plain, peeled, cooked beets.
- Coconut Milk: You can use your favorite dairy free milk in this. I love coconut milk for its minimal ingredients and gut healing properties.
- Frozen Banana: Frozen banana does a nice job of adding sweetness and creaminess.
- Your favorite toppings: I love adding fresh fruit, grain free granola, peanut butter, chia seeds, coconut flakes, yogurt and honey. Make it your own and top with your favorites!
Step By Step Preparation Instructions:
- Step 1: The main component for a successful, ice-cream like smoothie bowl is to use frozen fruit as your base. Cut up some bananas and keep them in your freezer, and stock up on your favorite frozen fruit so that you can just throw it all in the blender when you need. Add your favorite dairy free milk and any additional supplements you want to add, throw it in the blender and there you have it.
- Step 2: Be prepared to use the tamper tool to help push the ingredients around and help the blender get your smoothie bowl nice and smooth. You will get a bit of an arm work-out, but once you’ve gotten the hang of making them, it becomes easier. I start with the blender on speed 1 to mix the ingredients and start to coarsely chop the fruits. Then, turn up the speed a little at a time, using the tamper and constantly pushing down the ingredients. If you are having a really hard time getting the blender to catch, you can add 1 tablespoon of milk at a time. Keep blending until all the ingredients have been processed and you have a smooth, delicious texture.

Vegan, Berry Beet Smoothie Bowl
Ingredients

- 4 frozen baby beets or 1 large
- ⅓ cup coconut or almond milk
