The Story:
Breakfast is the best meal. Period. It’s the perfect backdrop to long talks, starting your day well, or a comforting end to your day. This breakfast skillet replays in our house over and over. It’s packed with warm, nourishing ingredients that fills your tummy and soul, and is packed with flavor and texture. This is also a favorite and something I look forward to so much when we go camping. Picture this: coffee in hand, morning campfire going, kids playing while you prepare this over the fire. Truly, nothing better. This country skillet breakfast is SURE to nourish you for all your camping adventures. You can easily switch up the flavors or use whatever veggies you have on hand. I am constantly playing with different flavor combos, but this is a simple, tried and true, farmhouse blend. Stay home (or stay at the campground), make this instead!

Here is the list of ingredients you will need to make this country breakfast skillet.
- Bacon: FLAVOR and fat for all the other ingredients to cook in.
- Potatoes: Hearty, sticks to your bones and is there anything more delish than a crispy potato? I don’t think so!
- Onion: Top favorite 5 flavor for me is caramelized onions. A must.
- Green and Red Pepper: Also delicious when caramelized and the perfect veggie to compliment the other components.
- Egg: For protein and comfort.
- Avocado: A good source of healthy fat, and it also helps lighten this hearty meal.
- Green Onions: Helps cut through the richness and adds some needed fresh green flavor.
Step By Step Preparation Instructions:
This is a super simple process and can be done in only 1 skillet!
- Step 1: First, cube up your potatoes. Add your cubed potatoes to a small microwave safe bowl with a tablespoon or 2 of water. Place in the microwave for a minute or two, just until the potatoes start to soften a bit. Since the potatoes take the longest to cook, this kickstarts the cooking process so that they finish cooking beautifully and crisp up once you add them to the skillet.
- Step 2: Get your pan nice and hot. Add the bacon and cook until a good amount of grease has been released and is turning a darker pink color. Don’t drain the bacon grease! It keeps in all the flavor and becomes the cooking oil for the potatoes. Trust me.
- Step 3: Then, add in the potatoes. Let them rest where they lie so that they start to get a good crisp to them. Once turning brown and crispy, stir them around so that the other sides of the potatoes also get crisp.
- Step 4: Next, throw in onions and peppers and let them get nice and caramelized. If at any point your bacon is starting to get too crisp, you can remove it so that the other ingredients have time to reach perfection, then toss it back in to warm up.
- Step 5: Top with egg, avocado and green onions. DELISH!

Country Breakfast Skillet
Ingredients
- 4 strips bacon
- ½ chopped red pepper
- ½ chopped green pepper
- ½ chopped onion
- 4 oz cubed potatoes
- 2 eggs
- 1 avocado
- 2 thinly sliced green onions
Instructions
- Wash, cut and prep all your veggies.

- Top with eggs, avocado (a must to cut through all the rich, savory) and green onions. Enjoy!
