The culmination of all the flavors of this peach flatbread pizza is what lunch dreams are made of!

The Story:
Special doesn't mean complicated! This pizza is proof of that. I start this with an easy pizza crust mix from Simple Mills. It comes together easily with just a few pantry staples, and comes out crisp and sturdy. Then I layer on juicy fresh peaches, creamy dairy-free feta, peppery arugula, fresh basil, and finish it with a drizzle of hot honey! The sweet fruit, tangy “feta,” fresh greens, and gentle heat from the honey complement one another and create a beautiful variation that’s bright, balanced, and seriously satisfying.

Here is the list of ingredients you will need to make this peach flatbread pizza.
- Simple Mills Almond Flour Pizza Crust Mix: I love this mix, because it is grain-free, made with wholesome ingredients and comes easily with just a few extra ingredients.
- Fresh Peaches: The star ingredient! Juicy, ripe-but-firm slices bring bright sweetness and elevated flavor to this pizza.
- Arugula: Peppery greens that balance the peaches with a crisp, fresh bite; I toss arugula on at the end so it stays bright and fresh.
- Dairy-Free Feta Cheese: I love Violife feta cheese! It's SO good. It's creamy and tangy with that salty, “cheesy” vibe without the dairy.
- Basil: Fresh basil is one of my favorite herbs of summer and it ties in perfectly playing up the sweet notes of this pizza.
- Red Onion: Adds a little bite, and a burst of savory flavor.
- Hot Honey: A drizzle of hot honey adds another flavor component, adding just a bit of heat to make all the flavors pop!


Step by Step Instructions:
- Step 1: Heat the oven to 350°F (or follow your dough’s temperature). If you have a pizza stone or steel, preheat it too. Line a baking sheet with oiled parchment.
- Step 2: Prepare your preferred dough. If using Simple Mills: Whisk water + oil + apple cider vinegar, then stir into the mix until a dough forms (per package quantities).
- Step 3: Shape your dough. Lightly oil a sheet of parchment. Place the dough on top and, with oiled hands, 7-8 in disk. Dock with a fork to minimize bubbles.
- Step 4: Now to bake the crust. Transfer the parchment and dough to the hot stone or baking sheet and bake until fully cooked and golden. You will want firm edges and a lightly browned underside. Since these topping for this specific pizza are best when just warmed slightly, the needs to fully bake without the toppings. Note: Fully baking the crust first is key. You’ll only warm the toppings briefly so the peaches and dairy-free feta don’t release too much moisture.
- Step 5: Prep toppings while the crust bakes. Thinly slice fresh peaches and red onion. Crumble the dairy-free feta, and gently slice the basil. Have arugula and hot honey ready.
- Step 6: Once the crust is finished baking, add a light layer of the dairy-free feta, then the peach slices and red onion. Return to the oven just to warm, about 2–4 minutes, or a brief 30–60 second broil.
- Step 7: Remove from the oven, then top with fresh arugula and basil, and drizzle hot honey over everything. Slice and serve right away.
